Fishing for stripers in 50 plus feet of water will normally find the larger fish. If they are not taking anchovies try swimming baits and see if you can get them to bite. Jigging in 50-60 feet deep has been doing well on Mead.
Fishing Tips for Lake Mead

Action is slow for all species found here except sunfish which are fair. You can catch sunfish in 6-20 feet of water. If you want to try fishing for stripers consider fishing deep water with bait or trolling. For both largemouth and smallmouth bass you have to use slow presentations if you want to catch anything. Good luck fishing!
